SEASONAL PASTA AND GNOCCHI

Italian cooking is varied and rich in all its aspects but pasta and gnocchi have a special place in its history and traditions. As Italians emigrated to different parts of the world these dishes became an integral part of many different cuisines. This hands-on class will focus on kneading, rolling, cutting and forming fresh pasta, tortellini and gnocchi. Each with be paired with sauces complement their flavor. The menu consists of: Fettuccine in Fresh Pesto Cream Sauce; Three Cheese Ravioli with San Marzano Tomato and Basil Sauce; and Ricotta Gnocchi, Sweet Corn with Pancetta and Cream Sauce.

Cooking over a live flame is may be a primitive style of cooking, but it still can't be beat. The combination of a smoky, caramelized crust and a tender interior is what cooking on the grill is all about. As summer gets into full gear we turn our attention the grill for our date night classes as we prepare a menu featuring an appetizer, main course and salad. Hands-on Kids Series - Monday, July 11th to Thursday, July 14th, 9pm to 11pm Four-part series of hands-on cooking classes for kids aged 10 to 12. Please note, the group dynamic is critical in these classes so this age range is firm. The goal of this four-part series of hands-on classes is to teach kids fundamental techniques needed to prepare a variety of basic meals. Along the way we stress kitchen safety and the proper use of and care of cooking tools. Each class will begin with instruction on the recipes being prepared included understanding the ingredients, measurements and procedure. Participants then prepare the items listed in each class with the guidance and supervision of instructors. Show More...The menus are designed to stress fresh ingredients and kid-friendly flavors. As the class progress the kids get to eat the dishes they prepare and ask questions. Ages 10 to 12. Part 1: Vegetables - In our first session we stress an important component of a healthy diet - vegetables. We will teach the kids how to clean, prepare and cook vegetables and turn them into delicious dinners with pasta and rice. Part 2: Fish and Seafood - The task of getting kids to enjoy eating fish is made easier when they are involved in the preparation. We'll focus on fish and seafood that they are most likely eat and prepare it in ways that they will enjoy. Part 3: Meat - This class focuses on techniques that take advantage of the versatility of chicken, beef and pork. After this class, your junior chef will be cooking fabulous dinners in no time.
